Just fixed this recipe to use up a couple mangoes I had that I didn't think
I'd get around to eating otherwise. It originally had 6 Tbs of butter but I
managed without any of it.
Mango Baby Cakes
Butter flavored cooking spray
4 tbs brown sugar
4 tbs toasted sliced almonds
2 mangos, peeled and diced
1/2 cup flour
1/2 tsp baking soda
1/2 cup sugar
1/2 cup egg beaters or equivelent of 2 eggs
1/2 tsp almond extract
preheat oven to 350 degrees.
Spray 4 ramekins with Pam. Sprinkle a tablespoon of brown sugar at the bottom
of each. Cover the sugar with a tablespoon of almonds. Divide mango evenly
over almonds.
In a small bowl mix flour, sugar and baking powder. Add "eggs" and almond
extract. Stir till compleatly mixed.
Divide batter evenly between ramekins. Place on a cookie sheet and bake in
the oven for about 27 minutes or until the toothpick thingy works.
Let cool about 10 minutes, then run a sharp knife around the edge and invert
each ramekin onto a rack or plate. Serve hot or warm
