Hi, Ruth! Soy nut butter has about half the fat of peanut butter, and a
similar taste, although it's usually a bit sweeter. You could sub that, or
you could use a small handful of roughly-chopped peanuts or soy nuts. Not
sure what pouring off the oil would do, but you'd think it would have SOME
effect in reducing the fat! The function of the peanut butter in the recipe
probably goes beyond flavor, however; it probably is also the thickening
agent for the sauce, making the sauce a little creamy in texture. So you'd
lose that effect if you use chopped nuts. Well, the thinking cap is one,
but that's all I come up with at the moment.
