Peach Pie

Filling:
4 cups fresh peaches -- sliced
3 tablespoons whole wheat flour
1/3 cup apricot spreadable fruit -- (or unsweetened apricot preserves)
2 teaspoons lemon juice
1/8 teaspoon nutmeg
Topping:
1 tablespoon maple syrup
1/2 teaspoon vanilla
3/4 cup quick cooking oats
1 tablespoon cornmeal
Filling: Gently mix peaches with flour and place in a 9-inch pie pan. Mix together preserves, lemon juice and nutmeg. Spoon over peaches. Bake at 375 degrees for 30 minutes. Remove pan and reduce temperature to 350 degrees.
Topping: Combine maple syrup and vanilla in a bowl. Stir in oats and cornmeal. Mix well. Crumble topping mixture over peach filling and return pie to oven for 15 minutes longer. Serve warm or cold.
