I assume "pantry" means "stuff not kept in the refrigerator"? If so, here goes:
pasta - all kinds
bulgur wheat
cous cous
millett
rice - brown rice is deelish: chewey and satisfying
(my new favorite breakfast is leftover brown rice with some almonds, raisins, a teeny bit of maple syrup and sprinkle of cinnamon)
cooking tip for brown rice: if you want it for dinner that night, soak the rice all day in the proper amount of cooking water (say, 2 cups rice & 3 cups water);
the rice will cook faster
Basmati rice is a wonderful whole grain rice that takes about half the time to cook as brown rice
beans - all kinds
dried fruit - ditto
nuts - lots! (seeds too!)
herbs & spices & nutritional yeast
all kinds of vinegars (current faves:
balsamic vinegar & ume plum vinegar)
soy sauce (or low-sodium tamari or Bragg's liquid aminos)
onions, garlic, ginger (fresh & powdered)
nut butters (almond butter, yum)
soy milk & rice milk (the kind you don't have to refrigerate 'til you open them)
tofu that comes in the same containers as the milk
rice cakes
