Hi! Here's another recipe. This one came to me from my friend Eli! Any
kind of squash will work. I hope you enjoy this as much as I.
Butternut Squash Soup
2 small or 1 larage butternut squash
3 cups broth (Eli uses water with bullion cubes.)
4 medium apples, sliced
1 large onion

Bake squash - or skin and not bake
Cut into chunks - add chunks to broth. Bring to boil and then simmer,
covered, 20-25 minutes, until squash is tender.
Saute' onions and apples. Blend/puree' everything (onions, apples, squash)
except the broth together. Put back into broth, reheat and serve.
