I have volunteered to do a "layered-type" salad for Thanksgiving dinner at my mother/father-in-law's house. Does anyone have ideas for a salad that:
1) can be prepared well in advance (the day before) and
2) has no or little fat and
3) is vegetarian/vegan
4) is unlike the 1980's version which contains mayo, peas, and other icky stuff.
The group of 32 is definitely not vegetarian (except for me and one other). They are having the "traditional" meal of you-know what, potatoes, gravy, etc. I am looking for a truly amazing greens based salad that will be a hit!
