Chick Pea and Artichoke Au Gratin

CHICKPEAS AND ARTICHOKES AU GRATIN

14-ounce can of chickpeas
14-ounce can of black-eyed peas
1/2 cup of artichoke hearts (canned is fine), chopped
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
3 cloves of garlic, chopped
1 teaspoon of lemon juice
2/3 cup fat free sour cream
1 egg replacer
1/2 cup of fat free cheddar cheese, shredded
Salt and pepper to taste

Drain the chickpeas and mix them together with the black-eyed peas,
artichoke hearts, and chopped peppers. Then, mix in the garlic,
lemon juice, salt, and pepper. In a separate bowl, mix together the
egg replacer, ff sour cream, and ff cheese. Pour this mixture over the
veggies and
bake at 350 degrees Fahrenheit for half an hour or until the top
browns.
