I ALSO LOVE THIS TIME OF YEAR FOR COOKING CREAMY, WARMING, COMFORT FOODS IN
MY CROCKPOT.
HERE ARE A FEW FAVORITES, SIMPLE , FEW INGREDIENTS, YUMMY !
VEGETARIAN POSOLE
1/2-1 cup onion, chopped.
2-5 cloves garlic, chopped.
1 1/2 cups mushrooms cut into halves or quarters.
2 sliced carrots
1 cup green beans
2 cups chopped peeled winter squash / or sweet potato
2 cups canned tomatoes or 4 to 7 fresh tomatoes and 1/2 cup water
One can (29 ounces) hominy or corn
one can (15 ounce) lima beans
1 T balsamic vinegar
pinch salt
2 teaspoons each (more or less) cumin and oregano
black pepper to taste.
Fresh cilantro to taste (3-6 Tablespoons, shredded)
place all ingredients in crock pot in order listed.
cook on low setting 4 to 6 hours adding liquid if necessary.
Delicious with corn bread sticks dunked in stew !
Calico Chili
1/3 C red wine or vegetable stock
3 large onions, diced
3 C sliced white mushrooms
2 C chopped Italian plum tomatoes
4 cloves garlic, minced
1 C chopped celery
1 C chopped carrots
1 tsp ground cumin
5 C vegetable stock
2 Tbs chili powder (or to taste)
1 C garbanzo beans, soaked and drained
1 C kidney beans, soaked and drained
1 C pinto beans, soaked and drained
1/4 C diced canned green chilies
3 Tbs low sodium tomato paste
1 tsp dried basil
Place all ingredients in crock on low 4 to 6 hours adding additional liquid
if necessary.
