Hi Ruth! You might want to try this one-it's really easy as it takes
anything you have on hand and it's very forgiving-almost any proportion

Italian Veg Stew
3-4 carrots peeled and sliced
1 green pepper, diced
1 red pepper, diced
2-3 celery stalks, cleaned and diced
1-2 large onions, sliced
3-4 garlic cloves, chopped or mashed
sliced green beans or wax beans, or both
1 large zucchini, sliced
some eggplant cubed
1 or 2 28 oz cans tomatoes, either whole or chopped
fresh diced Italian plum tomatoes
1 can tomato paste
diced mushrooms
green peas
1-2 tbs sugar
1-2 tbs each basil & oregano, or to taste
pepper and salt if you use it
add 15 mins before done, any kind of canned beans, artichoke hearts, etc
Saute the onions and garlic in either a tiny am't of olive oil or water
till soft. Then add everything else and cook till soft. Add the beans and
canned stuff last so it does not disintegrate.
chick peas are good too!
Serve over brown rice or whole wheat pasta.
