re: Angel Food Cake

This is my first post to the group, so apologies if my etiquette is somewhat
off...

A favorite recipe of ours...

You can find a lemon Angel Food Cake mix (Robin Hood brand here in Canada),
which bakes up really well.  We cut it into about four or five layers which
is actually quite easy if you have a sharp serrated knife.  Make two batches
of lemon pudding, with just a little less milk than the package suggests.

Put a layer about 1cm thick of the pudding in between each layer of cake.
Build up the whole cake this way.  You will have pudding left over (oh for
shame!), but one package isn't enough, I'm afraid.

We ice it with a tub of ultra-low fat cool whip, mixed with about 1/3 of a
package of lemon Jell-o.  The jello won't dissolve completely, but if you
don't use too much, it won't be gritty.  Ice the whole cake, sides, inside
and all.  One tub of the cool whip is just about the perfect amount.
Garnish with lemon slices/wedges or cover the whole cake with a sprinkling
of toasted coconut (although this does bring up the fat content a bit).

Toss the whole thing in the fridge for at least an hour or two before
cutting it, again with a sharp, serrated knife.

Not sure how many calories per slice, but if you use skim milk in the
pudding, skip the coconut, and use the ultra low-fat cool whip, the whole
cake only has about 10 or 12 grams of fat, so something like 1 to 2 grams of
fat per slice, and it tastes fantastic.  Really light and refreshing...
