any interesting restaurants in Edinburgh, Scotland?

I'm going to London for 2 weeks in July-August and Scotland for 5 days. Any 
interesting restaurants in Edinburgh I shouldn't miss? I'll be going with a 
non-veggie, so I need to keep that in mind. We're going for the Edinburgh 
Scottish festival. Hope to get some veggie haggis!
