Chocolate Torte
This torte is pure chocolate decadence - with no chocolate. It tastes =
unbelievably rich, yet is surprisingly low in fat, and with no =
cholesterol. It was a great hit with Vegans, Vegetarians and meat-eaters =
alike - and can be adapted for people who can not eat wheat products =
(glutin alergy).
In a medium saucepan, stir together the following:
1 cup couscous
1 cup sugar
1/4 chup cocoa
1/4 teaspoon salt (can reduce)
2 1/2 cups water
Bring to a simmer and cook over medium heat until thickened, about 7 =
minutes. Spread in the bottom of an un-greased 9-inch springform pan.
In another medium saucepan, combine the following
1/2 cup sugar
5 tablespoons cornstarch (normally contain glutin - can get glutin =
free varieties)
3 tablespoons cocoa
2 cups non fat soy milk or rice milk
Whisk smooth, then cook over medium heat, stirring constantly (be =
carefull - it can stick to bottom of saucepan) until very thick, like =
thick pudding. Spread evenly over the top of the couscous mixture.
Refrigerate until set, at least 2 hours, before serving.
HINT: To remove from springform pan, run a warm knife around edge of =
torte first to prevent sticking.
Per serving (1/12th of pie): 161 calories, 3g protein, 26g carbohydrate, =
1g fat, 106 mg sodium, no cholesterol.
