I got the following receipe from the archives and was really disappointed
with it. It wasn't exactly dry, but it was very tough and chewy. You could
really taste the "fatfree" in it. Any suggestions on how to make it better?
Or any pumpkin muffins that are really good?

Pumpkin Muffins
Dry ingredients:
1 1/4 C. Oats (can be quick or regular)
1 C. Flour
1 tsp Baking Powder
1 1/2 tsp Pumpkin Spice
1/2 Baking soda
Wet ingredients:
1/4 C. Soy milk
Equiv. of 1 egg
1 C. Pumpkin purée
3/4 C. Packed brown sugar
1/2 tsp Salt
1 tsp Vanilla
Topping:
1 Tbsp Brown sugar
1 1/2 tsp Cinnamon
Mix wet & dry ingredients separately. Add wet into dry and mix. Place in
muffin pans and top with topping. Bake at 375 F for 25-30 minutes.
