Hi Casey! I think the problem with the pumpkin muffins is not enough
'wet' ingredients and too much dry. I usually bake with loose directions
and go with what looks right. Next time try adding some applesauce to the
batter till it is less dense, adjust the timing and it should be better,
more moist & less chewy. HTH, bk

I got the following recipe from the archives and was really disappointed
with it. It wasn't exactly dry, but it was very tough and chewy. You
could
really taste the "fatfree" in it. Any suggestions on how to make it
better?
Or any pumpkin muffins that are really good?

Pumpkin Muffins
Dry ingredients:
1 1/4 C. Oats (can be quick or regular)
1 C. Flour
1 tsp Baking Powder
1 1/2 tsp Pumpkin Spice
1/2 Baking soda
Wet ingredients:
1/4 C. Soy milk
Equiv. of 1 egg
1 C. Pumpkin puree
3/4 C. Packed brown sugar
1/2 tsp Salt
1 tsp Vanilla
Topping:
1 Tbsp Brown sugar
1 1/2 tsp Cinnamon
Mix wet & dry ingredients separately. Add wet into dry and mix. Place
in
muffin pans and top with topping. Bake at 375 F for 25-30 minutes.
