This is my favorite Lentil Stew (Soup) Recipe. It is a little time
consuming because of having to roast the peppers, but you could do that
ahead of time.
Vegetarian Lentil Stew
10 Servings
4 onions diced
4 sweet red bell pepper cut into flat pieces
8 cloves garlic
1 tsp. cumin
2 tsp. basil
1 tsp. oregano
1 tsp. thyme
2 tsp. chili powder
1/2 tsp. cayenne
4 Cups vegetable stock
2 Cups uncooked lentils
1 Cup dry red wine
16 oz. tomato sauce
3-1/2 to 4 Cups cooked white rice
4 medium tomatoes, peeled, seeded, chopped
1 Cup chopped green onions
Fat Free Sour cream for serving
~Saute onions in water over low heat until almost tender, set aside.
~Preheat broiler. Cut peppers into flat pieces, place skin side up on a pan
in broiler. Cook until skins are blackened and blistered. Remove pan from
broiler and cover for 10 minutes to allow peppers to steam. Peel off skin,
dice, set aside.
~Put onion in broiler until browned (careful not to let them burn), stirring
frequently.
~Mix garlic and spices, saute for 2 minutes.
~In large pot add vegetable stock, tomato sauce, wine, lentils, peppers,
onions and garlic spice mixture. Bring to a boil and let lentils simmer
until tender 30-40 minutes. Add cooked rice and tomatoes and green onions.
Simmer 5 minutes. Serve with dollop of ff sour cream.
