This always turns meat eaters into vegetarians and is good hot or cold
Corriander Rissotto Pie - A.A.Dean
Saute lightly onion (1-2), garlic (1-2 cloves), grated courgette (2-4),
mushrooms (250-500gms) in non stick frypan lightly.
Add 1-2 cups of arborio rice and lightly brown.
Add 4 cups of water with 4 cubes of vegetable stock (fresh or cubes) plus
salt and pepper to taste.
Simmer covered until thickened - if too thick then add more water.
Add canned or freshly cooked chickpeas and kidney beans to taste.
Heat through then remove from stove.
Add finely chopped bunch of coriander.
Line elongate pie dish with ~ 5-6 sheets of filo pastry (not necessary to
spray). Add cooked mixture. Top with 5-6 sheets of filo and spray last 2
sheets.
Cook until brown in a medium oven
