Another blonde moment...Thanks to the astute members on the list, someone has
noticed I forgot the flour on the recipe...Serves me right for trying to do
this as I was getting everyone off to work and school.
For the Impossible Crust Quiche...please add 1/4 cup flour...
Impossible Crust Quiche:
1 package frozen cauliflower, partially cooked, drained and sliced
1/2 cup onions, chopped
1 small green pepper, chopped
4 ounces fat-free cheese, (I prefer cheddar or colby cheese), shredded
1 cup egg substitute
1 cup skim milk
1/4 cup flour
1 table spoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon pepper
Preheat oven to 375 degrees. Arrange partially cooked cauliflower in the
bottom of a 9" pie plate. Layer over the cauliflower, onions, bell peppers
and cheese.
In a bowl whisk together remaining ingredients and pour over the vegetable
mixture. Bake for 25 minutes until set and top is golden. Let stand 5
minutes before serving. Yield 4 servings
