The American Heart Association cookbook (a new edition came out in 1999
or 2000) has lots of very good recipes. They aren't all low enough in
fat for this list, but they are often low fat versions of the things
most Americans are used to eating (for instance, chicken parmesan that
is baked instead of fried). Health-wise I think it's better to eat lower
fat than the recipes in this book would be, but for someone who is anti
low fat these recipes could be a really big improvement over their
previous diet. You should be able to get it at your local library to try
it out.
