While everyone's talking about latkes, I'll add my favorite version.
Grate 1 potato, 1 onion, and 1/2 to one small zucchini.
(I use a processor, but you needn't). As you're transferring the vegs
to a mixing bowl,
strain or squeeze out most of the liquid (save for stocks).
Add 2 Tbsp flour, 1 egg white or substitute, salt and pepper.
Put several dolops on the hot pan, cover, and let cook for several
minutes.
Flip them and do the same.
