Pumkin Pasta Sauce

Thick and rich - Use your imagination and add or delete ingredients you like
to use this base for a soup, a dip, or the pasta sauce as listed below. ( My
addition is to add 1/2 cup salsa to the ingredients before puree, tho it
doesn't use it here......)

PUMPKIN PASTA
600g pumpkin,
1 large onion
1/2 cup water
3 bay leaves
freshly ground black pepper
1/4 tsp ground nutmeg
1/2 fat free sour cream
300g dried or 500g fresh pasta
Peel and roughly chop the pumpkin and onion. Place the pumpkin, onion, water
and bay leaves in a microwave proof bowl. Cover and cook on high power for 8
- 10 minutes or until the pumpkin is tender. Remove the bay leaves, Puree
with the pepper, nutmeg and sour cream. Serve atop pasta and along with a
crisp organic greens salad.
