I just made this and it worked so well, I thought I would share it:
Easy Shiitake Bean Soup recipe:
Serves 4-6
1 can fat free vegetarian refried beans
1/2 cup to 1 cup dried shiitake mushrooms (I buy giant bags of these at
Sam's Club for a very reasonable price)
1/2 Tbsp vinegar (I use Maple vinegar)
1/2 Tbsp vegetarian worshteshire (optional)
1 tsp chopped garlic
2 tsp hot sauce
6-10 cups of water
1 Onion diced
1 tomato diced
Break the shiitake mushrooms into small pieces. Put everything in a pot and
use a spoon to break up the refried beans and dissolve it into the water.
(Alternatively, you can put the beans in the blender with two cups of the
water and dissolve it that way.) Leave it on medium heat (adding water if it
gets too thick) for 1/2 hour - 1 hour. (I prefer it to cook longer.) You
should have a soup that is slightly thicker than a broth when you are
finished. It really is delicious and very easy.
According to DietLog on my Palm 3xe it has the following nutritional profile
for the entire pot of soup. If you feed 4 divide the numbers by 4. If you
feed 6 divide the numbers by 6.
