Hi All!
I really enjoyed this thick comfort, quick and easy
recipe. Here's in hopes you will give it a try and
enjoy it as well!
1 cup frozen corn, thawed
1 clove garlic, minced
2 cups lowfat soy or rice milk, more if necessary
1 cup solid pack pumpkin - fresh cooked even better
1 cup cornmeal
IN YOUR FAVORITE SAUTE BROTH ( OR WATER ).
Saute corn and garlic 3 minutes, stirring frequently.
Stir in milk and pumpkin. Bring mixture to a simmer,
stirring frequently. Slowly stir in cornmeal. Reduce
heat to low and simmer 4 minutes, stirring constantly
until mixture is smooth and thick.
Add additional milk if mixture becomes too thick.
Season with salt and pepper to taste.
Let's all come up with some satisfying comfort soups
for cold weather - thick and delicious and as natural
as can be made with fresh ingredients.
