What can I serve on endive leaves?

At an upcoming party, what can I serve on endive leaves? I just used them 
for the first time at a party this weekend. I had a couple jars of eggplant 
stuff and the Greek caviar. They were a hit! But at another party next 
month, what can I put on them? I don't want to buy this stuff again. Maybe 
crab/tuna/egg salad?
