Someone asked about ways to use the stem portion of broccoli. I have bought
broccoli-slaw in the grocery store. It appears to be stems (maybe peeled)
shredded like you would cabbage. I use the same dressing I would for cabbage
coleslaw. It is very tasty and makes good use of the stem.
We also like to simply steam and eat the stems with the heads. The larger
portions of the stems may need to be peeled first. They also make a good base
for a "cream" of broccoli soup.
