Jamie Fumo, I make brown rice risotto just fine, with no
cover at all. I usually don't have the time to stir and stir,
so it comes out more like pilaf than risotto. Will post
recipe soon. It probably needs more liquid than white rice does.

P.S. Finally tried Polenta Primavera last night. It was
posted to the list a couple of weeks ago. Very yummy!
I'm eating the leftovers this minute!
