Someone asked for a recipe for applesauce, but you really don't need one!
This is one of the first things my Mom taught me to make as a girl. You
need to use apples that will soften when cooked - we always use MacIntosh.
I don't know what other varieties would work, but my friend had no luck
with Red Delicious. Anyway, just peel and core the apples and slice them
into a sauce pan. You can put a very small amount of water in the bottom of
the pan to get them started, but all you have to do is cook them up (I use
a pretty high heat to start, then simmer), add sugar and cinnamon to taste
and cook until the sugar disolves. We love it hot or cold.
