I'm the one who posted the recipes for chipotles. I have a 'lil Smokie smoker but you could probably use a charcoal grill with a lid. Just get a small bed of charcoal going and soak some fragrant wood chips in water for about 1/2 an hour. put chips on top of charcoal and they will start to smoke. I COOK on the grill this way with lots of charcoal and little wood. I think to smoke you would use a little charcoal and lots of wood to keep the heat down and have smoke for a longer time (a few hours at least).
