I recently ran across this in the August issue of Good Housekeeping. It has zero fat and sounds great for a hot summer day! Haven't had a chance to try it yet but remember that someone was asking for jicama recipes.
Ingredients
2 med. jicama (peeled and cubed - 3/4 in. cubes)
1/4 c. fresh lime juice
1/2 tsp. salt
1 piece watermelon (2 1/2 lbs.)
1/2 c. chopped fresh cilantro leaves
1/8 tsp. cayenne pepper
lime slices (garnish)
Toss jicama with lime juice and salt. Cover & refrig. 30 mins.
Cut rind off watermelon & discard. Cut melon into 1/4 inch cubes to equal 4 cups. Remove seeds. Add melon , cilantro, and pepper to jicama; toss well. Refrig. 15 minutes more to blend flavors. Garnish with lime slices. Makes about 8 cups.
