Watercress

Rosemary asked about watercress.
Here in England it is most usually made into soup - which can be eaten
either hot or cold. Unfortunately the only recipes I have are very creamy
with LOTS of double cream - not so good for fat-freers! As it is quite
mild it is also used more as a salad green than as a herb. Its great in a
mixed green salad and, as someone already posted, is very good in fat-free
cream cheese sandwiches. Try also putting lots in a salad sandwich (much as
you would cress).
I understand it is also a good source of iron.
Hope this helps.
