Yams are a staple, as far as I'm concerned. Here's some of the things I
do with them:
Twice-baked, with a little bit of brown sugar and raisins.
Baked and Mashed, and used as a base in things like bread, cookies, etc.
In a casserole - my favorite is to slice up some yams (uncooked), throw in
a can of black beans, some sliced apple, some raisins, and a littel bit of
brown sugar and bake till it's all nice and tender.
