A salsa recipe I like to make is one I made up myself. My husband
loves it.
1 large tomato, seeded and chopped
1/2 onion, chopped (more if you like)
1 green (or yellow or red or all 3) pepper, seeded and chopped fine
1 1/2 teaspoons vinegar
1/4-1/2 teaspoon sugar (this draws out the juices of the veggies)
1/2 teaspoon salt (or more to taste)
Put all ingredients into a bowl. Mix well. Let sit on counter for
at least an hour, covered with plastic wrap, stirring every once in
a while. Before serving, add a sprinkling of cilantro, fresh or
dried. If you like, you can add a chopped garlic clove. We like to
eat it with ff tortilla chips, or on rice. Of course, you can make
as big or small a batch as you like. Just play with it, and you'll
get the right combo of vinegar, salt and sugar. If you like the heat
(which I don't), add jalapenos.
