I accidentally left out the oil in a favorite recipe I had modified and
came up with these wonderful fat-free fruit-filled oat bran muffins.
Fat-free oat bran muffins
2 c. oat bran
1/4 c. brown sugar
2 t. baking powder
1/2 t. salt
1 c. nonfat milk
2 egg whites, slightly beaten
1/4 c. honey
1 med. banana, mashed
1 med. apple, thinly sliced and then chopped
1/4 c. dried apricots, chopped
Line 12 medium muffin cups with paper baking cups. Combine dry ingredients.
Mix milk, egg whites and banana together. Add chopped apple and apricots
to liquid mixture. Mix liquid mixture with dry ingredients until moistened.
Fill muffin cups almost full. Bake 15 to 17 minutes or until golden brown.
