Roasted Winter Vegetables

1 small swede (rutabagga?)peeled and cut into large wedges
2 large carrots peeled and halved lengthwise
4 x 2oz parsnips peeled
12 oz pumpkin peeled deseeded and cut into wedges
1 small celeriac peeled and cut into large chunks
2 red onions peeled and quartered
2 fat leeks washed trimmed and quartered
2 sweet potatoes peeled and cut into wedges
Lite spray oil
1 clove garlic crushed
A few sprigs of fresh thyme rosemary, and sage
Freshly ground sea salt and black pepper
1 tspn coriander seeds crushed

Prepare the veg and place them in a large bowl
Arrange vegetables in a large pan which has been sprayed with the lite
spray oil.
Sprinkle with garlic (I used several cloves of garlic whole and just added
to the veg mix) Tuck the herbs between the veg.Grind some sea salt and
black pepper over the top and then sprinkle with the crushed coriander seeds.
"Roast" in a preheated oven at Gas mark 6/ 200c/ 400f for about 25 - 30
mins or until the vegetables are tender and slightly charred.
