I think all the fatfree'ers must be out raking leaves, here are a couple
ideas for Kathleen's cookbook for her son.
Pasta,
Start with a jar of pasta sauce, add canned beans and/or your favorite
frozen mixed veggies, say about 1/2 cup beans and 1 - 2 cups veggies. Heat
and serve over pasta or grain.
Beans and Rice
Cook 1 cup brown rice in 2 cups water.
Stir in 1 15 or 16 ounce can black or pinto beans, pour off liquid.
Stir in 1 cup or so of your favorite salsa.
Heat through.
Serve as is or use as burrito filling.
Use a can of veggie chili as a topping for baked potatoes, or serve over
rice or pasta.
