RE: cheese please

This may not be quite what you were after but,
my favorite FF cheese is Soyakaas Jalapeno Jack (there is
a non FF version also so be careful buying it... also
it's not vegan).

It has lots of flavor from the jalapenos.  I love it on
nachos and on quesadillas, burritos, etc.  There is a
FF cheddar also but that one is rather bland.
