I have a similar recipe that does not go soft in the middle. Instead of
baking it in a pie pan for 40 minutes, press the crumbs in a springform pan,
place the pan in a shallow roasting pan, add enough boiling water to come ½
way up the sides of pan. Bake in 325deg preheated oven until set about 1
hour 15 min. Shake pan gently, the cake should be set in the center and not
wobbly. Place pan on wire rack, cool to room temperature, cover and chill
similar to the recipe from Jan 28th V00#29.
