pressing tofu

The other day, I pressed my tofu for the first time. Instead of passively 
sitting in the marinade, the pressed tofu soaked it up like a sponge. 
Eating the tofu raw wasn't as pleasurable because the seasoning was so 
magnified, but once cooked, that extra flavor was a big difference.
