Hi Guys !
I would like to respond to the Chili thread with a few of my favorite things
I add to Chili
to make it nice ( to my taste - )
Last year I won a Chili cookoff sponsored by the United Way, took 1st place,
and my, I was sooooo surprised as mine was only 1 lonely vegan chili
surrounded by steaming hot pots of all different concoctions filled to the
brim with different types of animal.
Anyway, sigh, the basis of my chili was sweet potato, bulgur, and
crystallized ginger.
The rest of the ingredients were your basics - tomato ( I used salsa ),
garlic, cumin, chili powder, a bit of brown sugar and a pinch of cinnamon.
This may not sound like a chili to most folks but mmmmmmm do these flavors
blend nicely !! I also used for color red bell pepper, black beans, kidney
beans and white navy beans. I don't have the recipe, on file, and never
have had it come out as good as it did the first time either, but, my
favorite additions to any chili recipe are : mashed winter squash or sweet
potato, cornmeal is great in lieu of corn, cinnamon gives a cooling flavor,
and crystallized ginger gives it a very good flavor that makes folks wonder,
What's the secret ingredient here ?
I hope you may experiment and if so, please pass along any "secrets" of your
own making !!
