I don't know if this is the same recipe as the TJ soup, but it may come
close. This recipe came to me via a friend who is on the chileheads list,
so you may want to tone down the chile powder. I may just make some of this
myself this week. I like the idea of making such a big batch, then freezing
it in baggies.

Subject: [CH] Winter Veggie Soup to Peel the pounds off
Made this today as a tasty pot of Diet Soup as Summer is a coming!
1 large head of cabbage cored, cut into 8th's and sliced
1 bunch celery-sliced
1 lg. bulb fennel, cut in 1/4's, sliced,
4 leeks cleaned, sliced
2 large onions 1/4's sliced
Peppers- I used 1 large yellow, 2 Pimentos, 2 Italian Horn Chiles, 2 red
bells, seeded, 1/4's, sliced
1 large can (28 oz) green chiles (not pickled) sliced
alternate layers of veggies & sprinkle in-between layers with:
herbs de Provence
Chipotle Chile powder
crushed garlic
Chopped Italian Parsley
add 1 can (28 oz) crushed tomatoes -in the summer fresh is best!
add 1 large can of tomato Juice or V-8 Juice
Stir occasionally, cook until done. Taste, make seasoning adjustments as
needed, simmer a little longer to mellow those flavors.
This is a very tasty filling soup, and very low cal. Put individual
servings in zip locks or vacuum bags for future lunches!
