Mock Chicken Soup (Vegetarian)
Ingredients
6 Carrots (scrubbed and washed)
4 Leeks (washed)
2 Onions (Whole with skin and washed)
6 Zucchini (scrubbed and washed)
Celery (washed)
Dill (washed)
4 glasses of water
2 glasses of vegetable broth (all natural)
Preparation and Cooking
Wash all the vegetables, celery, and dill thoroughly. In a large pot put the
carrots with the onion, and zucchini, and cover with water. Cover the pot
until it boils, and let it simmer for another 10 minutes. Then put the leeks
and dill, and add the vegetable broth. Add some salt and pepper (according
to your taste). Let it cook for another 35 minutes.
Tip:
This soup can be served with the vegetables in the soup, or as a vegetable
broth. I like to serve this soup with either thin cooked noodles, or cooked
rice, or with cooked vegetables wontons.
