Here is my favourite:
Shirley's vegetarian lasagna
About 9 lasagna noodles (that's what makes 3 layers of noodles in my dish).
I use whole wheat noodles and never boil them beforehand - works for me.
A few cups of veggies - cauliflower, broccoli, carrot, mushrooms, whatever
takes your fancy. I use the frozen kind (California mix, and add fresh
mushrooms later) and nuke it just enough to be able to cut the veggies into
little pieces.
About 8 oz of fatfree mozzarella, grated, and 1 cup fatfree cottage cheese,
mixed together.
1 large jar or can of your favourite tomato sauce, or make your own.
A bit of fatfree Parmesan, grated.
I put a dollop of tomato sauce in my pyrex baking dish, then put down 3
noodles (uncooked). Then half the veggies, then half the cheese mixture on
top of them. Layer a good amount of sauce on top. Then more noodles, the
other half of the veggies, more sauce, more noodles. Top with the remaining
sauce and sprinkle Parmesan on top. The trick is to saturate everything
really well in tomato sauce, so the noodles cook. Bake for 45 minutes or so.
My husband and kids always look forward to this one!
