This is from "1001 Low-fat Vegetarian Recipes". I
haven't tried it yet. The author Sue Spitler has a
lot of great pizza recipes. If you're interested in
pizza, you probably want to get this cookbook!

BASIC PIZZA DOUGH
1 1/2 cup all-purpose flour, divided.
1 package fast-rising year
1/2 teaspoon sugar
1/4 teaspoon salt
1/2 cup very hot water (120 degrees)
Combine 3/4 cup flour, yeast, sugar, and salt in a
bowl. Add hot water, stir well. Mix in enough of the
remaining 1/2 cup flour to make a soft dough.
Knead dough on a flour surface until smooth and
elastic, three to five minutes. (Or use a kneading
paddle on your mixer.) Cover dough with bowl; let
stand fifteen minutes before using. Spray pizza pan
with cooking spray, making rim around edge. Add
toppings and bake at 425 degrees for fifteen to twenty minutes.
