Nancy Miller asked if one can substitute soy or rice milk
plus lemon juice for buttermilk in recipes. Absolutely!
I do it all the time and never have experienced a problem.
1 cup "buttermilk" = 1 Tablespoon lemon juice + soy (or rice)
milk to reach the 1 cup level on your measuring cup.
