I just got McDougall's Maximum Weight Loss Plan and really liked these
recipes!
Baked Millet Breakfast Squares
1 cup millet 1/4 tsp salt (optional)
4 cups water
Combine ingredients in a saucepan and bring to boil. Cover and cook over low
heat unttil water is absorbed, about an hour. Spoon into a flat baking dish
and flatten. Refrigerate until set, at least 45 minutes or overnight. Preheat
oven to 350°. Slice into 1/2 inch squares and bake on a nonstick bkaing sheet
for about 45 minutes.
Serve warm with unsweetened apple sauce, fruit sweetened jam or maple syrup.
Serves 4. Yummy!
Breakfast Apple Rice
2 cups cooked long grain brown rice
1-2 apples, cored and chopped
1/3 cup apple juice
1/4 cup maple syrup
2 tsp lemon juice
1 tsp vanilla extract
1/2 to 1 tsp cinnamon
1/8 tsp each ginger and cardamom
1/2 tsp nutmeg
Preheat oven to 350°. Combine ingredients in a cassarole with a cover. Bake
for 45 minutes or in a microwave for 10 minutes at full power, stirring half
way thru the cooking time.
Serve hot.
Serves 3.
